Ingredients

  • Okonomiyaki sauce (similar to Worcestershire sauce)
  • Japanese mayonnaise
  • Dried bonito flakes (katsuobushi)
  • Dried seaweed flakes (aonori)

Instructions

  1. Prepare the batter: In a large bowl, mix flour and water or dashi until smooth. Add eggs and shredded cabbage, stirring gently to combine. If using yam, mix it in as well.

  2. Add fillings: Incorporate additional ingredients such as seafood, green onions, or tempura flakes into the batter.

  3. Cook the pancake: Heat a non-stick pan or griddle over medium heat. Lightly grease the surface with oil. Pour a portion of the batter onto the pan and shape it into a round pancake. Place slices of pork belly or bacon on top.

  4. Flip and cook: After about 4 to 5 minutes, when the bottom turns golden brown, carefully flip the pancake using a spatula. Cook for another 4 to 5 minutes until both sides are crispy and fully cooked.

  5. Add toppings: Transfer the Okonomiyaki to a plate. Spread Okonomiyaki sauce and mayonnaise on top. Sprinkle with bonito flakes and dried seaweed flakes.

  6. Serve and enjoy: Slice into bite-sized pieces and enjoy this delicious Japanese dish hot.
