What is King Cake? How to Make The Festive Treat of Mardi Gras

Bake the King Cake

King Cake is a colorful, sweet, and symbolic cake traditionally enjoyed during Mardi Gras (Fat Tuesday) and the Epiphany season in the Southern United States, especially in New Orleans, Louisiana. This iconic dessert is more than just a cake; it represents celebration, history, and community. Covered in vibrant purple, green, and gold sugar or icing, King Cake is a centerpiece of Carnival season, which begins on January 6th (Twelfth Night) and lasts until Fat Tuesday, the day before Ash Wednesday and the start of Lent.

One of the most exciting traditions of King Cake is the hidden baby figurine inside the cake. The person who finds the baby in their slice is said to have good luck and is responsible for bringing the next King Cake to the party!

The Origins of King Cake

King Cake has its roots in European traditions, particularly in France and Spain, where similar cakes were made for Epiphany (Three Kings’ Day), which celebrates the arrival of the Three Wise Men who visited baby Jesus. French settlers brought this tradition to Louisiana in the 18th century, where it evolved into the colorful, cinnamon-filled pastry known today.

The colors of King Cake—purple, green, and gold—were chosen in 1872 by the Rex Parade organization and have specific meanings:

  • Purple represents justice
  • Green symbolizes faith
  • Gold stands for power
